Polenta Maltese Focaccia

Maltese style focaccia with a crispy yet moist polenta base.

Ingredients:

  • 500ml Water

  • 500ml Milk

  • 250g Tipiak Pre-cooked Polenta

  • 30g Grated Parmesan Cheese

  • 20ml Olive Oil

  • 1 Green Bell Pepper

  • 40g Cherry Tomatoes

  • 30g Black Pitted Olives

  • 50g Maltese Sausage

  • 2 Dry Peppered Ġibniet

  • 1/2tsp Dry Oregano

  • Salt & Pepper

Directions:

  • 1.In a medium-size pot bring the water and milk to a gentle boil. Add about half a teaspoon of salt.

    2.Gradually add 1 packet (250g) of Tipiak polenta stirring constantly to avoid creating lumps.

    3.When it starts to thicken, lower the heat and add the grated Parmesan and some freshly ground black pepper.

    4.Stir well to incorporate everything and remove from the heat.

    5.Line a baking tray with baking paper and brush it with olive oil.

    6.Evenly spread the polenta mixture and brush the top with more olive oil.

    7.Chop the rest of the ingredients and spread them on the polenta base.

    8.Finish it off with some dry oregano and bake it in a preheated 220°c oven for about 25 minutes or until it's nicely browned.

    9.Can be served hot from the oven or cold, making it ideal to take it with you to the beach.
