ĠibnaRoll Meatloaf

Super juicy meatloaf with a sweet glazed bacon shell and soft ġbejna center. So easy and delicious!

Ingredients:

  • 800g Good Quality Minced Beef

  • 2 Ħanini ĠibnaRoll

  • 400g Streaky Bacon

  • 2 Eggs

  • 1tsp Olive Oil

  • 1 Onion

  • 2 Carrots

  • 50g Breadcrumbs

  • 1tbsp Worcestershire Sauce

  • 1tbsp Tomato Ketchup

  • 50ml Fresh Cream

  • 1/2tsp Thyme

  • 1tbsp Fresh Parsley

  • Salt & Pepper

    Glaze:

  • 2tbsp Tomato Ketchup

  • 1tsp Worcestershire Sauce

  • 1tsp English Mustard

  • 1/2tsp Honey

  • 1/2tsp Brown Sugar

Directions:

  • 1.Chop the onion and sauté it in olive oil until it's lightly brown. Let it cool before using.

  • 2.In a large mixing bowl combine the minced beef, onion, chopped carrots, chopped parsley, dry thyme, Worcestershire sauce, cream, the eggs, ketchup, breadcrumbs, and season to taste with salt & pepper.

  • 3.Mix well using your hands and set aside.

  • 4.Line a loaf pan with the bacon as shown in the video and fill half of the container with the beef mix pressing firmly with a spoon.

  • 5.Place two ĠibnaRolls in the centre and continue filling with the remaining beef mixture.

  • 6.Fold the bacon inwards to seal everything and refrigerate for about 10 minutes.

  • 7.In the meantime prepare the glaze by mixing all the ingredients well.

  • 8.Place a piece of aluminum foil on a baking tray and gently take the meatloaf out of the loaf pan. To make this process easier you can lightly oil the container before placing the bacon. Take your time during this process, you must not break off the bacon!

  • 9.Generously glaze the entire loaf leaving some glaze for later.

  • 10.Roast in a preheated 180°c oven for 1 hour.

  • 11.After 45 minutes of cooking, brush the remaining glaze and put it back in the oven until it's nicely brown and crispy.

  • 12.Allow it to cool off for about 10 minutes before cutting.

  • 13.Enjoy!
