Kusksu with Maltese Sausage Meatballs

Traditional Maltese Kusksu with Maltese Sausage Meatballs.

 

Ingredients:

  • 2tsp Olive Oil

  • 1 Medium Size Diced Onion

  • 1tsp Finely Chopped Garlic

  • 1 Large Carrot

  • 150g Broad Beans

  • 200g Potatoes

  • 1/2tsp Ground Black Pepper

  • 1tbsp Tomato Purée

  • 1ltr Water

  • 1 Chicken Stock Cube

  • 100g Kusksu Pasta

  • 150g Pork Mince

  • 150g Maltese Sausage Meat

  • 2-4 Fresh Goat's Milk Cheeselets

Directions:

  • 1. Fry onion and garlic in 2tsp of olive oil on medium-high heat until onion gets translucent. Stirring at every step.

  • 2. Add carrot & broad beans.

  • 3. Add potato & pepper.

  • 4. Add tomato purée.

  • 5. Add water & chicken cube. Bring to a boil, stir well and simmer for about 25 mins stirring every 10 mins.

  • 6. While it's cooking let's prepare the meatballs.

  • 7. Mix ground pork with Maltese sausage and then incorporate an egg yolk.

  • 8. With wet hands form into balls and set aside.

  • 9. After about 25 mins add kusksu pasta, meatballs & cheeselets to the soup. Make sure to fully immerse the cheese.

  • 10. Simmer for 15 mins. It's very important to stir DELICATELY to avoid pasta from sticking to the bottom. Be careful not to break the cheese.

  • 11. Serve with freshly ground pepper, grated cheese and a couple of toasted Maltese bread.

  • 12. Enjoy!
