Kusksu

One of Malta’s favourite soups. A simple broad bean soup with the signature ‘kusksu’ pasta and fresh Maltese Ġbejniet. 


Ingredients for 4 persons:

  • 2tsp Olive Oil 

  • 1 Medium Size Chopped Onion

  • 2 Garlic Cloves (minced or finely chopped)

  • 1 Large Carrot or 2 smaller ones (sliced)

  • 150g Broad Beans

  • 2 Medium Potatoes (diced)

  • 2 Small Zucchini (diced)

  • 1/2tsp Ground Black Pepper

  • 1tbsp Tomato Paste (kunserva)

  • 1ltr Water

  • 1 Chicken or Vegetable Stock Cube

  • 100g Kusksu Pasta

  • 4 Fresh Sheep’s Milk Cheeselets (ġbejniet)

  • 4 Fresh Eggs

  • Salt to Taste

Directions:

  1. In a large pot, fry the onion and garlic in 2tsp of olive oil on medium-high heat until the onion gets translucent. Stirring at every step. 

  2. Add the carrot & broad beans, zucchini, potatoes, tomato paste, and black pepper. Mix well and keep on cooking the vegetables for about 5 minutes on a medium-low heat.

  3. Add the water, stock cube, and the pasta. Bring to a boil, stir well, and simmer for about 15 minutes.

  4. Taste and adjust with salt to your liking.

  5. Crack the eggs and gently add them to the pot, together with the cheese.

  6. Cover the pot and let them simmer on a low flame for about 10 minutes, or until the eggs are nicely poached.

  7. Serve with plenty of Maltese bread.
