Xgħir il-Forn (baked barley)

This is a variation from the traditional ross il-forn. Barley is full of nutrients, healthy and very tasty!

Ingredients:

  • 300G Pearl Barley

  • 1/2tsp Salt

  • 600ml Water

  • 1tbsp Borges Olive Oil

  • 1 Onion

  • 1 Carrot

  • 500g Pork & Beef Mince

  • 1tbsp Tomato Purée (kunserva)

  • 1/2tsp Sugar

  • 1/2tsp Curry

  • 200g Passata di Pomodoro

  • 1cube Chicken Stock

  • 50g Parmesan

  • 50g Mozzarella

  • 3 Eggs

  • Salt & Pepper

Directions:

  • 1. Wash the barley until the water runs clear. Place in a pot with 600ml of water and half a teaspoon of salt.

  • 2. Bring to a boil then simmer for 15 minutes or until the water evaporates. Set aside to cool down.

  • 3. Add 1 teaspoon of olive oil in a saucepan and fry the onion until it gets translucent. Add the carrot, meat and season to taste. Fry for about 5 minutes then add the tomato purée, sugar, curry, passata and the chicken cube.

  • 4. Stir well and simmer gently for 20 minutes.

  • 5. Add the boiled barley to the sauce, parmesan, mozzarellla and the eggs.

  • 6. Mix well and place them in a greased baking dish. Top it with parmesan and fresh ground pepper.

  • 7. Bake in a 220°c for about 45 minutes or until it is nicely golden brown.

  • 8. Rest for 10 mins and serve.

  • 9. Enjoy!
