Homemade Pizza Margherita

Sometimes simplicity is best. Pizza is one of my favourite food and making it at home has never been easier. Just a couple of ingredients and you’re good to go.

Ingredients for 2 Pizzas :

  • 500g Lamb Brand Ristorante Pizza Mix

  • 250ml Warm Water

  • 30ml E/V Olive Oil

  • 100g Fiamma Diced Tomatoes (I blended them for a silkier texture)

  • 100g Fresh Mozzarella

  • Some Fresh Basil

Directions:

  1. Sift the flour in a large bowl.

  2. Add the olive oil and warm water and work it into a dough.

  3. Knead it for 5-8 minutes on the kitchen counter until you get a silky firm dough.

  4. Place it back into the bowl and cover it in some oil.

  5. Let it rest for at least 2 hours or for better results refrigerate, and use the next day.

  6. Cut into two portions and roll them into a ball.

  7. Cover them with a kitchen towel and let them rest for another 30 minutes.

  8. Gently open them from the centre outwards without squashing the edges so you’ll get a nice crust. I use some semolina to make things easier. You can use flour too.

  9. Preheat the oven to the highest temperature it can go.

  10. Spread the tomato sauce and bake them for 5 minutes until they start to get lightly golden.

  11. Remove them from the oven and add the mozzarella and the basil. You can add the basil after they cook, it’s a personal preference.

  12. Turn on the oven grill and cook them under the grill until the mozzarella is melted and the crust is at your desired doneness.

  13. Drizzle some olive oil on top and enjoy.
