Pink Sausage Scotch Eggs

Scottish style eggs with delicious pink sausage meat.

Ingredients:

  • 450g (1pkt) Pork/Beef Pink Sausages

  • 6 eggs

  • 1 cup All-Purpose Flour

  • 1 cup Breadcrumbs

  • Salt/Pepper to taste

  • Oil for Deep Frying

Directions:

  • 1. On medium/high heat bring water to a boiling point. Once boiling, gently add 4 eggs. Boil for 6 minutes if you want a runny yolk, 8 minutes for a firmer yolk or 10 minutes for a hard-boiled egg.

  • 2. Remove from heat and immediately put them in ice-cold water to stop cooking. Once cooled, peel and put aside.

  • 3. For each egg, remove the skin from two sausages and mash them together.

  • 4. Open the sausage ball with the help of some cling film and season to taste.

  • 5. Place egg in the center and wrap the meat around it.

  • 6. Pass through flour, 2 beaten eggs, and bread crumbs. Repeat the egg and breadcrumb dip.

  • 7. Preheat frying oil and fry at 160°c for 5 minutes until you get a dark brown crust.

  • 8. Serve with some salad and enjoy :)
