Peanut Butter Pesto

A different twist to a classic basil pesto.

Can be served as pasta sauce or as a dip with lots of Maltese galletti!

Ingredients:

  • 3 garlic Cloves

  • 50g Parmigiano Reggiano

  • 2tbsp Peanut Butter (smooth)

  • 50ml Borges Garlic Seasoned Olive Oil

  • 2cups Fresh Basil

  • 1tbsp Fresh Lemon Juice

  • Salt & Pepper

  • Roasted Peanuts for decoration (optional)

Directions:

  • 1. In a small blender (or traditional mortar & pestle) start by blending Parmigiano Reggiano and garlic cloves together.

  • 2. Then add peanut butter, garlic oil and fresh basil. Blend well.

  • 3. Season with salt & pepper and add the lemon juice.

  • 4. Blend to combine. Do not over do it cause it will heat up the sauce.

  • 5. Serve with pasta or as a dip.
