Leftover Panettone from Christmas? If not, you can always buy it at a heavily discounted price. Add some Baci, and it's a match made in h-Oven! Trust me it's delicious!

Ingredients:

  • 1 Stale Panettone (about 750g)

  • 6 Eggs

  • 50g Caster Sugar

  • 100g Brown Sugar

  • 300ml Full-Fat Milk

  • 300ml Heavy Cream

  • 1/4tsp Salt

  • 1/2tsp Ground Cinnamon

  • 1tsp Vanilla Extract

  • Grated Zest of 1 Orange

  • 70g Roasted Hazelnuts

  • 70g Chocolate Chips

  • 10 Baci Chocolates (I'm using fondant ones here)

  • 1tsp Butter

  • Icing Sugar (optional)



Directions:

  • 1. Before you start this recipe, open the panettone 2-3 days before so it will go a bit stale. You don't need it too fresh.

  • 2.Start by whisking the eggs together with the sugars. Then add the milk, cream, salt, cinnamon, vanilla and orange zest.

  • 3.Cut the panettone into small cubes.

  • 4.Add it to the egg mixture and mix well. Try not to break the panettone too much.

  • 5.Refrigerate for at least an hour to soak up the liquid. You can leave it for longer but not too much as it will break. I would say maximum 4 hours.

  • 6.In the meantime chop the Baci and the hazelnuts into big chunks.

  • 7.Add them to the mixture together with the chocolate chips.

  • 8.Spread butter on a baking dish and put the panettone batter inside.

  • 9.Bake in a preheated 200°c oven for about an hour, or until it is nicely golden brown and solid in the centre. Do not let it get too dark.

  • 10. Allow it to cool before slicing. Can be served warm or cold with some sprinkled icing sugar or custard.

  • 11.Enjoy!
