Egg And Tuna Sandwich

Simple things are the tastiest. What's more delicious than a hearty tuna sandwich enjoyed by the sea during a day at the beach?

Ingredients:

  • 2 Large Cans Blue Angel Tuna (in oil or brine)

  • 1 Small Shallot

  • 2 Hard Boiled Eggs

  • Mayonnaise

  • Mustard

  • Freshly Ground Pepper

  • Chives or Chopped Parley (optional)

  • Lettuce

  • Sandwich Bread

Directions:

  • 1.Drain well the tuna cans and place them in a large bowl.

  • 2.Chop the hard-boiled eggs and add them to the tuna.

  • 3.Add the mayonnaise, English mustard, freshly ground black pepper, and optionally add some fresh chives or parsley. Do not add salt as the tuna is already a bit salty. Just check it for taste and add some if desired.

  • 4.Place a piece of lettuce and two tablespoons of the tuna mixture in each sandwich and enjoy!
