Chicken Braġjoli

This is Ch-EAT's chicken variation of this famous Maltese dish. Also cooked in a Crock-Pot and I must say that the result is really satisfying.

Ingredients:

  • 400g Minced Beef (chicken or pork mince are also good)

  • 1 Raw Egg

  • 2tbsp Fresh Parsley

  • 1tbsp Grated Parmesan

  • 2 Hard Boiled Eggs

  • 1tbsp Breadcrumbs

  • Salt & Pepper to taste

  • 8 Deboned chicken thighs (you can use breast instead)

  • 4 Slices Mozzarella

  • 8 Slices Streaky Bacon

  • 1 Chopped Onion

  • 2 Sliced Carrots

  • 1tbsp Butter

  • 1tsp Extra Virgin Olive Oil

  • 200g Button Mushrooms

  • 1/2tsp Mixed Herbs

  • 1/2tsp Corn Flour

  • 400ml Chicken Stock

Directions:

  • 1.Let's start with the filling. In a bowl combine together the meat mince, raw egg, parsley, Parmesan, breadcrumbs and chopped hard-boiled eggs. Season with salt & pepper.

  • 2.Now let's prepare the chicken. Place a plastic bag on a chopping board and place 2 chicken thighs side by side. If using chicken breast slice it in half.

  • 3.Place another plastic bag on top and flatten the chicken using a meat mallet. A heavy rolling pin will work fine as well.

  • 4.Put a slice of mozzarella and about 2 tablespoons of filling.

  • 5.Using the bottom plastic bag tightly roll the chicken.

  • 6.Place 2 bacon slices diagonally under the chicken and roll them around the chicken roll. These will give it a lot of flavour and will help the chicken keep its shape. You don't need any toothpicks.

  • 7.Let's start with the sauce. We are using our Crock-Pot for this recipe. Press the Brown/Sauté and Start. Wait until it gets hot.

  • 8.Add the olive oil and butter followed by the onion.

  • 9.Fry the onion for 5 minutes then add the carrots, mushrooms, and dry herbs. Fry for a further 3 minutes stirring constantly.

  • 10.Carefully place the braġjoli on top.

  • 11.Combine the cornflour with the chicken stock. Make sure not to leave any lumps. This will help the sauce get thicker.

  • 12.Add the stock to the pot and cover.

  • 13.Place the steam knob on the seal position and choose the Meat/Stew function. Press Start.

  • 14. Once ready, carefully remove the steam and uncover.

  • 15.Serve with mashed or baked potatoes.

  • 16.Enjoy!
