Chicken & Bean Bulgur Wheat Salad

When it’s the salad season you need variation. Here’s an easy salad you can make in little time.

Ingredients for 2 portions:

  • 200g Lamb Brand Bulgur Wheat

  • 200ml Boiling Water

  • 1tbsp Olive Oil

  • 1/2 tsp Salt

  • 250g Grilled Chicken Breast 

  • 100g Fiamma Four Bean Salad 

  • 1/2 Red Bell Pepper Chopped 

  • 20g Lamb Brand Sunflower Seeds

  • 2 Hard Boiled Eggs Sliced 

  • Fresh Parsley Finely Chopped

  • 2tsp Lemon Juice

Directions:

  1. Place the bulgur wheat in a bowl.

  2. Add the salt and oil.

  3. Add the boiling water and cover with cling film for 30 minutes.

  4. Fluff it up with a fork then add the lemon juice, pepper, parsley, and beans. Mix well.

  5. Finish it off with the grilled chicken, egg, and drizzle with sunflower seeds.

  6. You can chill it in the fridge before serving.

  7. Enjoy.
