Qaqoċċ Mimli - Stuffed Artichoke

Artichoke stuffed with a tuna and herb mix the way my grandmother used to cook it.

Ingredients for 3 persons:

  • 3 Artichokes

  • 150g Canned Tuna (in brine or oil)

  • 2 Garlic Cloves (crushed)

  • 2 Green Garlic Stalks (chopped)

  • 60g Pitted Black Olives (slice half of them)

  • 1tbsp Capers

  • 2tbsp Tomato Paste (kunserva)

  • 2tbsp Fresh Parsley (chopped)

  • 4 Potatoes

  • 2 Carrots

  • 1 Vegetable Stock Cube

  • Salt & Pepper

Directions:

  • 1.In a small bowl combine the tuna, crushed garlic, sliced green garlic, sliced olives, capers, 1 tbsp chopped parsley and 1 tbsp of tomato paste. Season to taste.

  • 2.Peel the potatoes and carrots and put them aside.

  • 3.Chop about an inch from the top of the artichoke, cut the stem and clean it from the tough outer leaves.

  • 4.Hit it against the working top to loosen the leaves and wash well under running water.

  • 5.Stuff the tuna mixture between the leaves and top of the artichoke.

  • 6.Place the chopped potatoes and carrots in a large pot, add about 2-3 inches of water, add the stock cube and a tablespoon of tomato paste.

  • 7.Place the artichokes on top and cover.

  • 8.Bring to a boil, then simmer for about an hour and a half (depending on the size of the artichoke)

  • 9.The artichokes are ready when you can easily slide a knife at the bottom.

  • 10.While cooking, keep an eye on the level of water. If it evaporates, add some more hot water.
