Pappardelle with Peanut Butter & Basil 

Vegan-Friendly pasta with a delicate creamy peanut butter & basil sauce.

Ingredients for 2 people:

  • 1 Onion

  • 2 Garlic Cloves

  • 1tsp Olitalia E/V Olive Oil

  • A Bunch of Fresh Basil

  • 2tbsp Pip & Nut Smooth Peanut Butter

  • 270ml (1 tub) Elmlea Plant

  • 400g Pappardelle 

  • 30g Chopped Peanuts 

  • Salt & Pepper

Directions:

  1. Finely chop the onion and fry it in the olive oil until it softens. 

  2. Add the finely chopped garlic and cook on a moderate flame for 5 minutes. 

  3. Add the cream, and the peanut butter and season with salt & pepper. When it boils lower the flame to a minimum. 

  4. In the meantime boil the pasta in plenty of salted water, and cook it for 1 minute less than instructed. 

  5. Coarsely chop the basil and add it to the sauce and simmer for a couple of minutes. 

  6. Add the pasta and give it a good mix and cook for just under a minute. 

  7. Serve with freshly ground pepper and chopped salted peanuts.
