Deep Pan Pizza Maltija

A crispy deep pan pizza with a soft centre topped with typical Maltese toppings and finished off with fresh Gozo cheeselets.

Ingredients for 2 pizzas:

  • 1pkt Lamb Brand Deep Pan Pizza Mix

  • 440ml Lukewarm Water

  • 60ml Olive Oil

  • Fiamma Diced Tomatoes in Juice

  • Maltese Sausage

  • 1 Small Shallot

  • Shredded Mozzarella

  • Green Pepper

  • Capers

  • Black Olives

  • Boiled Egg

  • Fresh Gozo Cheeselets (ġbejniet)

  • Lamb Brand Oregano

Directions:

  • 1. Sift the flour mix in a large mixing bowl. No need to add anything else as you have everything in the mix. Add the oil and turn the mixer on using the kneading attachment (or start working it by hand)

  • 2. Add the water gradually until you have a solid dough.

  • Knead for at least 5 minutes, cover the dough ball in a thin layer of oil and cover the bowl with cling film or a kitchen towel.

  • For a better result, let it rest in the fridge sealed in plastic for 24 hours.

  • If you’re using it immediately, let it rest for at least an hour in a warm place.

  • Divide the dough into 2 equal parts.

  • Open them on a floured surface leaving them about 1cm thick.

  • Place them in deep baking pans.

  • Top them with the diced tomato sauce followed by the mozzarella and your favourite toppings.

  • Bake them in a 220°c preheated oven for about 15minutes or until done.

  • Just before serving, finish them off with fresh Gozo cheese, drizzled olive oil, and freshly ground pepper.
