Crayfish Boil with Maltese Sausage

For all the seafood lovers with a Maltese sausage twist.

Ingredients:

  • 2tsp Salt

  • 2tsp Cajun Seasoning

  • 1tsp Fish Seasoning

  • 1tsp Paprika

  • 1tsp Mixed Peppercorns

  • 5 Bay Leaves

  • 1.5ltr Water

  • 500g Red Potatoes

  • 2 Onions

  • 1 Garlic Bulb (top part removed)

  • 400g Maltese Sausage

  • 300g Mushrooms

  • 2 Sweet Corn Cobs

  • 1 Lemon

  • 500g Crayfish (we are using pre-cooked frozen crayfish)

Directions:

  • 1. In a large pot place, all the seasonings and water and gently bring to a boil.

  • 2. Once the boiling temperature is reached, add potatoes, onions, and garlic and boil for 10 minutes.

  • 3. Add sausage, mushrooms, sweet corn and squeeze the lemon. Then add it to the soup base. Boil for further 5 minutes.

  • 4. Add the crayfish. Note that if you’re using pre-cooked frozen crayfish you just need to simmer for 5 minutes. If it's raw, boil for 5 minutes then simmer for another 2 minutes.

  • 5. Enjoy!
