Crabmeat Ciabatta

A quick lunch idea, crab mixed with creamy mayo, a touch of Dijon, and fresh rocket salad, all enclosed in a crunchy ciabatta bread. 


Ingredients for 1 portion.


Method:

  1. In a mixing bowl, combine the crabmeat with mayonnaise. Add more if needed to reach your desired level of creaminess.

  2. Add the Dijon mustard for an extra kick of flavour. Season the mixture with fresh parsley or dill, spring onion, salt and pepper to taste. Add a squeeze of lemon juice if desired for brightness.

  3. Gently fold the crabmeat mixture until well combined and the crabmeat is evenly coated with the mayonnaise mixture.

  4. Cut the ciabatta in half and toast it. Rub a clove of garlic to give it some extra flavour.

  5. Place some rocket salad on one slice of bread. Spoon the crabmeat mayo mixture onto the salad.

  6. Optionally, add sliced tomatoes on top of the crabmeat mixture.

  7. Top with another slice of bread to create a sandwich.

  8. Serve immediately.
