Coffee-Chocolate Lava Cakes

Soft chocolate cakes with a smooth melting center. 


Ingredients for 4 portions:

110g Unsalted Butter (room temperature)
200g Novi Dark Chocolate (Chopped)
2 large eggs
2 large egg yolks
50g Sugar
⅛tsp Salt
3tbsp All-Purpose Flour

1tbsp Instant Coffee

Directions:

  1. Grease your ramekins with some butter and add a little flour. Remove the excess and your ramekins are ready.

  2. Place the chopped chocolate in a microwave-safe glass bowl, add the butter, and melt in the microwave at 30-second intervals until melted completely. Add 1 tablespoon of instant coffee and mix well until combined.

  3. Place the eggs and yolks in a mixer bowl, add the salt and the sugar, and whisk them up until they get soft and fluffy.

  4. Fold in the chocolate mix, followed by the flour until well combined.

  5. Fill your ramekins with the mixture and bake in a preheated 180°c oven for 8 - 12 minutes. This depends on your oven but normally 10 minutes is enough if you’re using normal-size ramekins.

  6. Do not over-bake otherwise the center will solidify.

  7. Leave them to cool off for a couple of minutes then flip them gently over a plate and drizzle with icing sugar.
