Canned Tuna Cakes

Crispy on the outside, and soft and spicy on the inside. Canned tuna is so versatile!

Ingredients (makes 7-8 patties)

  • 2 Large Cans Blue Angel Tuna in Brine/Oil

  • 2 Spring Onions

  • 2tbsp Fresh Parsley

  • Zest of 1/2 Lemon

  • 1/2tsp Garlic Granules/Powder

  • 1/2tsp Sweet Paprika Powder

  • 1/4 Chilli Flakes

  • 1tbsp Fish Sauce

  • 2tbsp Breadcrumbs

  • 1 Egg

  • 50g Plain Flour

  • Salt & Pepper

  • Olive Oil

Directions:

  • 1.Drain the tuna well and place them in a large bowl. Add the chopped spring onions, chopped parsley, lemon zest, garlic granules, sweet paprika, chilli flakes, fish sauce, breadcrumbs, and one egg.

  • 2.Mix them well. Do not add salt as the tuna and fish sauce are already salty. We will season the flour for coating only.

  • 3.In a separate bowl add the plain flour and season with some salt and pepper.

  • 4. Form into small patties, pass them through the flour and set them aside.

  • 5.To cook, heat up a non-stick frying pan, add about a teaspoon of olive oil and cook the patties on low-medium heat for about 5 minutes. Flip them over and cook for further 4-5 minutes until they are golden brown.

  • 6.Serve with some freshly squeezed lemon and chopped parsley.

  • 7.Enjoy!
