4 Ingredient Fruit & Nut Cake

Afraid of baking cake? This fool-proof rich fruit & nut cake is as easy as 1-2-3….4, to be precise. Quick to make and the result is guaranteed. 


Ingredients:

  • 800g Mixed Dried Fruit

  • 200g Mixed Nuts (chopped)

  • 240g Self-Raising Flour

  • 240ml Orange Juice (or any other juice of your choice)

Directions:

  1. Place the mixed fruit in a bowl and add the orange juice. 

  2. Let it soak for at least 2 hours or overnight. The more you leave it, the more flavor it gets. 

  3. If you’re leaving it overnight, cover it and place it in the fridge. Let it cool down to room temperature before continuing. 

  4. Add the chopped nuts and mix well, followed by the flour. 

  5. Mix it well using a spatula making sure no lumps are formed, and transfer it to your cake tin (spring one) lined with greased baking paper. 

  6. Spread it evenly and flatten the surface. 

  7. Bake in a preheated 130°c oven for 2 hours. After almost the 2-hour mark, insert a skewer in the center and make sure it comes out clean. 

  8. Let it cool completely before removing it from the tin. 

  9. This cake won’t rise as it is very rich in fruit, and a small portion goes a long way!
